Roasted Vegetables and Foiled Baked Salmon by Gareth


This is one of my favourite lunch time meals, and also one of my favourite ways to cook salmon in general, it cooks nicely all the way through and gives it plenty of flavour. You can cook it with roasted vegetables like in this recipe or add it to pasta if you want to too. It is also a quick and simple recipe that requires very little prep. Salmon is such a great fish that you can get away with very little seasoning, especially if you go for a lightly smoked salmon to begin with.

You Will Need:

Salmon
Oil
Seasoning (Salt, Pepper, Herb Mix)
Choice of Vegetables
Lemon (Fresh if Possible)

1 Place Salmon in foil skin side down. Make sure there is enough foil to wrap up your salmon and vegetables together in a parcel at the end.

2 Score the salmon and sprinkle a little, salt, pepper, and a squeeze of lemon. You can also add some garlic or some herb mix. I like using an Italian spice mix on my fish too, but you might prefer other flavours. You can get away with very little additional flavouring.

3 Place your chopped vegetables in with the fish. You will want to keep the veg thin as you want it to cook in 15minutes. I prefer asparagus, courgette, halved tomatoes and onions but you can put in whatever you want really as long as it works with the fish.

4 Now curl up the sides slightly and add a drizzle of oil over the fish and vegetables. Then fold everything up into a closed parcel.

5 Place it in the oven and cook at around 180 degrees for 15-20 minutes depending on the thickness of the fish.

6 After 15 minutes check the fish is flaky and done, if it isn't give it a few more minutes, drain off the oil and then plate up. It shouldn't require any additional seasoning.
